‘Loving’ it, siblings to expand their food trailer and open new Boise restaurant

A pair of siblings with a unique food trailer are opening their first restaurant.

And it’s in a downtown spot most Boiseans know.

Loving Lefse is taking over the former Calle 75 Taco Shop, 110 N. 11th St. Lefse (pronounced “lehf-suh”) is Norwegian-style potato flatbread, traditionally served with butter and sugar. Wrapping sweet and savory fillings inside their lefse, Angeline and John Riley will focus on breakfast and lunch at the brick-and-mortar. They’re leaving the door open for the possibility of service later in the day, too, Angeline said in a phone interview.

Calle 75 closed in March to focus on its own food truck and catering business. Loving Lefse’s proposal to the city of Boise includes repainting the storefront, changing the black exterior to red with white trim.

Dishing up a family tradition, Angeline, 25, and John, 22, already had plenty on their plate. Green Acres Food Truck Park recently announced that Loving Lefse was added as a permanent, five-days-a-week concept. A popular warm-weather destination, Green Acres will kick off its season in May at a new location, 767 S. Pioneer St.

If all goes well, Loving Lefse’s new restaurant could open by June, Angeline said. Purchasing most of the kitchen equipment from Calle 75’s owners should help expedite things. “But we have a lot to figure out,” she added. “Just like construction and all of that kind of stuff.”

The Rileys started Loving Lefse as a tent set-up in Santa Clarita, California, in 2023, before launching the food trailer in Boise in 2024. Angeline is a graduate of the University of North Dakota, where she played softball. John graduated from Boise State.

“The first place we ever brought our food trailer was Green Acres,” she said.

The Loving Lefse menu remains fairly consistent, with a few seasonal tweaks. There’s the Cin-A-Lefse, which is similar to the middle of a cinnamon roll. Or a Breakfasta Lefse packed with eggs, chorizo, bacon and fries. Other creations include the pizza-inspired Lefseroni, or even lefse filled with Italian beef, cheese and pepperoncinis.

Fans of coffee and other hot drinks find a selection of specialty lattes, matchas, espresso and more.

Loving Lefse’s food trailer has racked up an exceptional rating of 4.8 out of 5 stars on Google. So there would seem to be built-in potential for restaurant success.

When the paint has dried and the kitchen is humming, expansion could feel like a blessing for the Rileys. Preparing lefse is a two- to three-day process, Angeline said. With food-truck season looming, the thought of additional elbow room is a dream come true.

“We’ve essentially outgrown our food trailer,” she said. “We cannot keep up with the demand. We need our own kitchen.”
