New boutique bakeries open in Boise and Eagle: ‘Daily bread shouldn’t be a luxury’

Spring snowflakes got you shivering?

Beat the chill with the scent of warm, freshly baked bread.

Two new bakeries have opened in the Treasure Valley: one in West Boise, one in downtown Eagle. Here’s the quick scoop.

Madre in Boise

Madre Bianca Baking Co. has taken over the former Caffè Sorrento space at 10668 W. Overland Road — at the corner of Overland and Five Mile roads. (It’s in the same strip mall as Flying Pie Pizzaria & Bistro and Hooligans Pub.) Madre Bianca is an offshoot of Coeur d’Alene-based Sebastian’s Coffee and Pastries.

“At Madre Bianca,” the bakery says, “we focus on accessible daily breads that are delicious but practical. Specializing in sourdough and sandwich breads as well as amazing handmade pastries. ... We firmly believe that daily bread shouldn’t be a luxury.”

Social media response so far? Pure stoke. One commenter confessed that he “picked up a couple of different turnovers, a raspberry danish (holy **** that was amazing), a cinnamon pinwheel, loaf of Japanese milk bread and a 4-pack of ciabatta bread, all for a little over $20!! I ate the pinwheel on the way home and it was fantastic! Can confirm I will never be skinny again as I will likely frequent this place way too much.”

There will be no daily indulging — at least for now. During its initial launch, Madre Bianca is open only on weekends, from 8 a.m. to 4 p.m. Saturdays and 9:30 a.m. to 3 p.m. Sundays.

Sourdough in Eagle

Sourdough & Sage just opened at 79 Aikens St., where it specializes in “gut-friendly sourdough and farm-to-table eats.” At this bakery, “menu categories stay consistent,” it explains, “but flavors will rotate in and out of the lineup as seasons change.”

Sourdough & Sage is more than delightfully chewy, naturally leavened bread. It’s hyped all sorts of temptations on social media: sourdough focaccia with petite salad, cinnamon raisin sourdough loaves, stromboli, cinnamon rolls, banana crunch bread, scones, quiche, peanut butter toast, candied Jalapeño cheddar bagels, lemon chicken orzo soup and lots more.

“Such a sweet bakery,” a 5-star Google reviewer wrote, adding, “so nice to have tons of patio seating.”
