Hungry for America’s ‘greatest’ sub, Meridian? ‘Iconic’ restaurant chain to open

A chain known for its signature, Thanksgiving-inspired sub will make its Meridian debut soon.

Capriotti’s Sandwich Shop is putting the final touches on a second Treasure Valley location — this one at 179 S. Ten Mile Road, suite 130. The franchise restaurant is on track to open this summer, according to spokesperson Regan Lee. Capriotti’s made its Boise-area debut last year in Star at 200 N. Highbrook Way.

Founded in Delaware in 1976 — but now headquartered in Las Vegas — Capriotti’s is known for The Bobbie. A turkey, stuffing and cranberry sauce sandwich, it tastes like a late-night refrigerator raid the day after Thanksgiving. Especially if you request a cup of gravy on the side. (Do it.)

Capriotti’s competes with chains such as Jersey Mike’s and Firehouse Subs. But it considers itself an “iconic sandwich brand” — at least according to a recent press release.

“Staying true to its roots, Capriotti’s slow roasts whole Butterball turkeys in-house daily and hand pulls them each morning to deliver unmatched flavor and freshness,” the release says. “With more than 150 locations across the U.S., the brand is home to fan-favorite subs like The Bobbie — voted ‘Greatest Sandwich in America’ — and unique offerings like the Capastrami, Cole Turkey and premium American Wagyu cheesesteaks. Capriotti’s continues to grow with a goal of reaching 500 locations by 2032 and has been ranked on ‘Fast Casual’s Top 100 Movers & Shakers’ list four years running.”

A third Capriotti’s restaurant is planned for the Treasure Valley, too, but its location hasn’t been determined.

“Our entrance into the Boise market has been a long time coming,” Capriotti’s CEO Ashley Morris said in a 2024 press release.

The Capriotti’s in Star has earned a rating of 4.1 out of 5 stars on Google and 3.2 out of 5 on Yelp.
