Want a new chain restaurant, Meridian? Have two. ‘Idaho is like our second home’
Meridian feels like an endless ocean of chain restaurants sometimes.
But there’s always room for one more, right?
Try two.
Fast-casual chain Cafe Rio Mexican Grill plans to open a pair of new Meridian locations over the next couple of months.
The first to open will be at The Village at Meridian. The address? 3243 E. Village Drive. It’s slated for March 25.
The second will be at 6097 N. Ten Mile Road — Ten Mile and Chinden Boulevard. That one will debut April 22.
Each restaurant will celebrate with a two-day grand opening bash: March 25-26 at The Village and April 22-23 on Ten Mile. Those will include games such as Plinko and corn hole, according to a press release, with the chance for customers to win prizes. Up to 100 winners could receive a free meal, according to the release. Cafe Rio also will sell chips and its “award-winning” pico de gallo for $1.99.
“We’re thrilled to be bringing our fresh food, made fresh, to more people in the great state of Idaho,” CEO Steve Vaughan said in a prepared statement. “The residents of Meridian are going to be excited to try our award-winning, flavor-packed, made-from-scratch recipes. Idaho is like our second home, as we currently have locations open in many other towns including Boise, Eagle, Kuna, Twin Falls, Pocatello, Idaho Falls, Rexburg and Coeur d’Alene.”
The first Cafe Rio opened in St. George, Utah, in 1997. Since then, it has expanded to multiple states. Its signature dish is a sweet barbacoa pork burrito, served enchilada-style.
In addition to that favorite feast, the new Meridian stores will feature “our fire-grilled chicken salad with our creamy tomatillo dressing,” according to the release, “in addition to a full menu of chef-inspired burritos, salads, tacos, enchiladas, quesadillas and more.”
