This bar vows to ‘set a new standard’ for Eagle — and the ‘industry itself’

The newest bar coming to Eagle will not be short on limes.

Or swagger.

Mexican-themed cocktail purveyor Lalo — from the owners of Gatsby bar in downtown Boise and Sid’s Garage restaurants in Boise and Meridian — plans to open Tuesday, Oct. 28, at 59 E. Colchester Drive.

Describing itself as an “immersive experience” where “every pour tells a story” and “every guest becomes part of something bigger,” the bar promises rare tequilas and mezcals, “and an atmosphere that blends elegance with edge.”

Lalo will set a new standard,” it says in a press release, “not only for Eagle, but for the bar industry itself. And for those seeking more, there’s Cartel — Lalo’s members-only social club …”

Located seconds away from popular food-and-drink destination Crave Kitchen & Bar, Lalo will serve customers from 4 to 10 p.m. Tuesdays through Thursdays and 4 to 11 p.m. Fridays and Saturdays.

No one younger than 21 will be admitted.

Lalo “has a design inspired by the vibrant spirit of Mexico,” it says.
