California Mexican Food is coming, Boise. It will open in a former burger restaurant.

When Zimm’s Burger Stache closed in 2018, one of the owners said the main reason was a lack of night customers.

That won’t stop a new 24-hour restaurant from taking its shot in the empty building.

California Mexican Food is set to debut later this month at 10889 W. Fairview Ave. Co-owner Alvaro Flores said he’s hoping to open Jan. 24.

As successful similar outfits such as Los Beto’s have proved, Boise diners have a large appetite for locally owned restaurants serving Mexican fast food.

California Mexican Food’s menu will be composed of Tex-Mex cuisine, Flores said. He predicts that the most popular item will be the California Burrito. Priced between $5 and $7, the hefty concoction will include steak, potatoes, salsa and cheese, he said.

So why call the restaurant California Mexican Food? Hey, why not? “The other co-owner — he came up with the name,” Flores said.

Along with a drive-thru, California Mexican Food will offer indoor seating for a little over two dozen customers, Flores said.
