‘A great fit’: Family-owned, ‘elevated’ soft serve ice cream shop opens in Eagle
A new ice cream shop has landed in Eagle just in time for sweltering summer temperatures.
And eager customers were prepared Friday, lining up to beat the heat with a cone from Soft Landing’s new location.
Dozens of customers were waiting on the block outside the brand-new store at 55 E State Street for its grand opening. Soft Landing, a self-described “elevated soft serve ice cream” and family-owned shop, opened a Boise location on State Street in February 2025, and now has expanded.
Katie Fourcin and family — her husband, Dominique, and her two daughters — are the owners, and they tout flavors with all-natural ingredients. It was a family tradition to have a weekly Friday night ice cream outing, Fourcin said, and they wanted to bring that to the Eagle community this week.
“We’ve poured our hearts in creating this space, and after months of planning and preparation, opening day is finally here,” Soft Landing stated in an Instagram post this week.
Fourcin told the Idaho Statesman that when they opened the Boise location, they received positive feedback and quickly built up a base of soft serve-lovers. That led to a lease signing at the end of 2025 that allowed the family to start the process of creating a second home in the heart of Eagle.
“I think downtown Eagle and the Eagle community felt like a great fit for us,” Fourcin said. “We have a lot of customers who drive from Eagle to go to the Boise store, and so we felt like this was a perfect location.”
Part of what sets Soft Landing apart its commitment to high-quality and natural ingredients, Fourcin said. There are no artificial flavors, colors or high-fructose corn syrup, she said, and the waffle cones are also gluten-free.
Customers in line told the Statesman that the ingredients really spoke to them. Becky Taylor, along with her husband and daughter, got in line before the store was even open, and were ready to try it for the first time.
Taylor said she found out about the shop’s opening on Instagram, and the Eagle residents knew they wanted to try it.
Fourcin said she was happy to see such a large turnout, with dozens of customers lined up 30 minutes before the doors officially opened.
“There’s a lot of anticipation that comes with the newness coming into the area, so there’s just a real vibrancy that I think people are excited about,” Fourcin said.
The soft serve shop offers signature flavors, sweet cream and chocolate, but every two weeks the store rotates two new dairy-based flavors and up to two dairy-free flavors that are seasonal.
For the grand opening in Eagle the store offered sweet cream, chocolate, pistachio, strawberry, wild berry and frozen lemonade.
You can’t leave out the toppings at Soft Landing. The shop makes its own potato chip brittle, chewy brownie bites, brown sugar granola bark and sugared walnuts. There also are chocolate chips, sprinkles, coconut flakes, hot fudge, salted caramel sauce and strawberry sauce.
Other than soft serve, the store has specialties including ice cream floats, affogatos, sundaes, ice cream sandwiches and dirty sodas.
Soft Landing will be open 3 p.m. to 9 p.m. this weekend. It will be closed Mondays, and then normal hours will be noon to 9 p.m. Tuesday-Thursday; noon to 10 p.m. Friday; 11 a.m. to 10 p.m. Saturday; and noon to 9 p.m. Sunday.
