It’s tasty and fresh, Meridian says. Now chain plans more Boise-area restaurants

If you skim reviews of Zao Asian Grill, which debuted in Idaho last fall at The Village at Meridian, you’ll notice two repeated words.

“Chipotle.” And “fresh.”

The first is a nod to Zao’s assembly-line counter setup, which is similar to the build-your-own concept used by Chipotle Mexican Grill. (Or Subway. Or Panda Express. Or a zillion other fast-casual chains.)

The second? It’s a compliment. Zao’s Asian’s ingredients, many Idaho diners agree, taste high-quality and healthy.

Zao’s Meridian store doesn’t get absolutely perfect reviews, but it’s up there; 4.2 out of 5 stars on Yelp and 4.3 out of 5 on Google.

Idaho diners clearly approve of the chain’s formula: customizable Asian bowls, salads, tacos and wraps.

Good thing. Because the Utah-based brand already is planning two more stores in the Boise market.

The first is slated to open this summer in southeastern Eagle — at the East End Marketplace development near the corner of Idaho 44 and Edgewood Lane. (Specific address: 650 S. Edgewood Lane, suite 120).

The target date? July.

The next Zao is on track for mid-2027. It will be another Meridian store, this time at The District at Ten Mile, a massive mixed-use development. (That address: 1085 S. Ten Mile Road.)

Known as Zao Asian Cafe back home in Utah, Zao goes by “Grill” in new markets like Idaho.

“Meridian, we’re so excited to be your new spot for fresh, flavorful Asian-inspired meals!” Zao exclaims on its Yelp page for the restaurant at The Village. “At Zao Asian Grill, you create your own bowl, wrap, taco, or salad with fresh veggies, quality proteins like chicken, steak, or tofu, and sauces that bring bold flavor to every bite. Korean red sauce and chili-lime aioli can help take Zao’s Asian tacos to another flavor level.

“We keep it simple: real food made fast, with options that fit any lifestyle — whether you’re looking for something hearty, light, or completely plant-based. Stop by for a quick lunch, family dinner, or a healthy option on the go.”

Founded in 2015 in Salt Lake City, Zao operates the majority of its 23 locations in Utah. But the chain, which does not franchise in the traditional sense, has crept into Idaho and Colorado.
