With sauce so good you’d eat it off ‘a tire,’ upgraded Eagle restaurant reopens

If there’s one thing guaranteed to make customers smile at Happy Teriyaki, it’s the Asian fusion chain’s finishing sauce.

Zig-zagged across protein-packed bowls and plates, Happy Sauce is a teriyaki game changer, co-owner Veronica Odiaga explains.

“You could put it on a tire,” she quips, “and everybody would eat it.”

No need for that. (Unless you want to, of course.) Because the opportunity to get saucy in the Treasure Valley just got even easier.

After closing In Eagle last summer, Happy Teriyaki just opened again at 664 S. Rivershore Lane — a location that debuted a decade earlier. Severing ties with its local franchisee, the Idaho fast-casual brand has taken over the store as a company-operated restaurant.

“It’s all redone,” Odiaga says. “Paint, flooring, equipment. New tables, chairs. It’s beautiful.”

Most important, she says, “we know the food’s gonna be quality. ... We’re very hands-on owners.”

Whether it’s a chicken breast bowl, beef noodle dish or pork teriyaki plate, Happy Teriyaki cooks its meat-, veggie- and rice-filled entrees to order. “We’re not holding anything in a warmer,” Adiago says. “And it’s authentic. ... Every piece of chicken is hand-trimmed. They don’t come out of a box and go on a grill.”

Keeping quality in mind has helped Happy Teriyaki grow into a dozen Gem State locations, plus one in Utah. And that attention to detail includes the crucial Happy Sauce. A recipe from Happy Teriyaki founder and co-owner Tae Cho, a South Korean immigrant, it’s more than the four basic teriyaki sauce ingredients: soy sauce, mirin, sake and sugar. “Ours has, like, 23,” Adiago says.

In a way, it truly is the secret sauce for this Meridian-headquartered Asian chain.

“It’s what tops it off,” she says. “The first thing you taste is that Happy Sauce, and it’s fabulous.”

Returning to action Thursday in Eagle, Happy Teriyaki undoubtedly squeezed bottles full force. “You just can’t go wrong with it,” Adiago says.

In spring, Boiseans on the West Bench can expect the same sweet-and-savory temptation. Happy Teriyaki will open a new location at 9056 W. Emerald St. It will be in a former Rapido Burrito spot. (Some might remember it as Gyro Shack before).

The plan for that Happy Teriyaki? To open in May.
