Boise newcomers open first of three chain restaurants serving America’s ‘greatest sub’

Boise-area residents can now get a taste of award-winning sandwiches, turkey subs, hand-crafted cheesesteaks and more with the recent opening of a popular franchise sandwich restaurant, Capriotti’s.

Capriotti’s Sandwich Shop, located at 200 N. Highbrook Way, Suite 100 in Star, opened on Thursday, March 20. The restaurant’s Treasure Valley debut was announced by franchisees Brian and Amanda Robertson in September 2024. The debut is just one of three locations planned by the husband and wife duo who moved to Idaho from Las Vegas in 2023, according to a press release.

“We’re thrilled to bring Capriotti’s to Star,” Brian Robertson said in the press release. “We’ve always loved the brand, and when we saw the need for a great sandwich spot in the area, we knew it was the right time to open. We can’t wait to share our favorite sandwiches with the community.”

The new Capriotti’s Sandwich Shop in Star isn’t the first in Idaho, but it does offer residents of the Treasure Valley an option closer to home than other locations. The chain restaurant also has shops in Twin Falls, Ammon and Coeur d’Alene.

Capriotti’s was founded in 1976 and serves grilled, cold and vegetarian subs, salads and cheesesteaks. Since its founding, the restaurant has gained notoriety for its turkey sub, made from whole turkey that has been slow-roasted on site.

The signature sub, known as The Bobbie, was voted “‘the greatest sandwich in America” in an AOL.com reader survey, according to the press release. The Bobbie offers a taste of Thanksgiving dinner year-round with its hand-shredded turkey, cranberry sauce, stuffing and mayo.

Capriotti’s is headquarted in Las Vegas, and has more than 175 locations across the United States. The next location planned by the Robertsons is for 2025 in Meridian, according to previous reporting by the Statesman. The new locations advance the chain restaurant’s overall goal of over 750 restaurants by 2032.
