Finally! After 15 months, this much-anticipated new Meridian restaurant opens Sunday
Start working up an appetite — preferably, a serious one.
After a lease was announced in September 2023, KPot Korean BBQ & Hot Pot finally will open Sunday in Meridian. The much-anticipated, all-you-can-eat restaurant has taken over the former Sizzler at 3380 N. Eagle Road.
Prepare for some real taste-bud sizzle. The KPot chain operates dozens of locations, primarily in the eastern half of the country. Diners should expect “a unique, hands-on … experience,” its website says, “that merges traditional Asian hot pot with Korean BBQ flavors, but modernized with a full bar and a nightlife-like atmosphere.” (In other words, the Meridian restaurant will have a liquor license.)
Hot pot is similar to Korean barbecue. But rather than grilling, it involves a pot of boiling broth and an array of meats, veggies, noodles and other ingredients. You plop them into the bubbling goodness at your table and treat the resulting creation like soup. Or you scoop cooked delicacies from your pot and dip them in various tasty sauces.
KPot isn’t the first of its type in the Treasure Valley. Magnificent Garden, 980 N. Milwaukee St. in Boise, describes itself as “the area’s only Korean BBQ restaurant.” (Obviously, not for long.)
Umi Japanese Shabu Shabu debuted in May at 2325 E. Fairview Ave. — in the Pine 43 development. Umi, which also has a location in Utah, is a similar cook-at-your-table, hot pot experience. And newly opened Mala House, a Chinese restaurant at the Idaho Asian Plaza in Boise, also does hot pot entrees.
KPot’s hours will be noon to 10 p.m. Sunday through Thursday, and noon to 11 p.m. Friday and Saturday.
The final seating is an hour before the restaurant closes. Reservations are not being accepted.
