Sweet! ‘Cult’ dessert brand to open late-night Boise bakery with delivery until 3 a.m.

If you crave a sugar rush while the rest of the world is sleeping, a bakery headed to Boise will feed your need.

And deliver to your door.

Insomnia Cookies will make its Idaho debut in the coming months, according to a news release. City records indicate the shop will be at 922 W. Royal Blvd. at Uncommon Boise, an apartment complex focused on student living near Boise State. Delivery will be available late — until 3 a.m. Thursdays through Saturday nights.

Founded in 2003 and headquartered in Philadelphia, Insomnia Cookies operates more than 280 locations nationwide. A “beloved cult brand known for serving warm cookies all day and late into the night,” according to the release, Insomnia would seem to have a built-in clientele near campus.

“Insomnia Cookies offers in-store, pickup, and delivery options for customers to experience the company’s signature warm, delicious cookies,” the release said. “From the Classic Chocolate Chunk cookie to favorites like Snickerdoodle and Confetti Deluxe, delicious ice cream, decadent brookies, brownies, and blondies, a full slate of vegan options and a frequently-rotating limited-edition menu, the brand’s offerings satisfy every sweet tooth — warm or cold.”

The Boise bakery is hiring. Although no specific date has been shared, the store is slated to open this fall, according to the online employment application.

Insomnia Cookie’s hours will be 11 a.m. to 1 a.m. Monday through Wednesday, 11 a.m. to 3 a.m. Thursday and Friday, noon to 3 a.m. Saturday and noon to 1 a.m. Sunday.
