New Meridian restaurant opens Tuesday with special drive-thru and return of ‘fan favorite’

When it comes to fast food, Meridian leads the Treasure Valley charge.

So it’s no surprise that a new Chipotle Mexican Grill debuting Tuesday at 1737 S. Meridian Road will offer a perk that’s become a convenience standard for the chain in recent years.

A “Chipotlane.”

Meridian’s newest fast-casual restaurant will have a special drive-thru window where customers pick up digital orders without stepping out of their vehicles. You can customize a burrito or salad on your phone or computer while paying in advance. Then pull into the Chipotlane and snatch the food with maximum efficiency.

The valley’s first Chipotlane appeared in late 2021 in Boise. A Meridian location launched in 2023 with one. The same thing happened in Caldwell months later.

The new Chipotle — near the intersection of Overland Road — will be open from 10:45 a.m. to 10 p.m. daily. (And, by the way? They’re hiring. That goes for Chipotles across the nation, a media release wants us to know.)

Looking for a food recommendation? Customer favorite Chicken al Pastor is back on the menu — for a limited time. Revived in March, it comes after significant clamoring from hungry customers.

About one in five transactions included Chicken al Pastor after it debuted on the menu last year, according to a media release. A “fan favorite” created in small batches each day, “Chicken al Pastor is made with fresh chicken hot off the grill, a rich marinade of seared morita peppers and ground achiote, balanced with a splash of pineapple for the right amount of heat, finished with fresh lime, and hand-chopped cilantro.

“… There have been three times more requests to ‘bring back Chicken al Pastor’ on social media than any other limited-time offering in the brand’s history.”

Get ready, Meridian. Traffic’s coming to your new Chipotlane.
