Popular Boise food stand to open storefront

Waffle Me Up has been dishing up big waffles around town for four years (most notably at the Boise Farmers Market), and now the popular mobile-food business is opening a brick-and-mortar spot.

Owner Hector Garcia is busy remodeling the former Guru Donuts space, at 204 N. Capitol Blvd., and hopes to open the restaurant by the middle of August.

Garcia is known for his liege-style Belgian waffles with seasonally fresh toppings, including the Waffle Me Strawberry waffle made with Nutella, fresh strawberries, strawberry sauce and a puff of fresh whipped cream.

The restaurant menu will have lots of new items beyond what’s offered at the mobile operation.

Expect to see an expanded lineup of glazes and sugar-caramelized waffles, in addition to waffles with eggs Benedict toppings and one with eggs and sausage gravy. Don’t be surprised to find some omelets to boot.

The restaurant will be open from 7 a.m. to 5 p.m. daily, but Garcia plans to add some later hours (possibly on weekends) once he gets up and running.

Waffle Me Up will continue operating on Saturdays from 9 a.m. to 1 p.m. at the Boise Farmers Market.
