Iconic Sun Valley restaurant chain opens in Boise area with ‘paradise in your mouth’
If you’ve spent the lunch hour in one of Idaho’s popular mountain towns, you’re familiar with KB’s.
Founded in 1993, the iconic Sun Valley chain serves fresh Tex-Mex in its original home of Ketchum, plus in Hailey, where it expanded in 2004. Since then, KB’s has moved into McCall, Twin Falls and Idaho Falls.
Now KB’s is headed to Eagle, too. KB’s opened a new restaurant Monday, July 20, at 2794 S. Eagle Road.
This isn’t KB’s first venture into the Treasure Valley. Years ago, restaurants came and went in downtown Boise and in Meridian. But the family-operated brand seems destined for long-term success at The Bridges at Lakemoor, a growing development at Colchester Drive and Eagle Road.
KB’s cooks up fresh-tasting breakfast and Mission-style burritos, tacos, enchiladas, salads and quesadillas. Many regulars gravitate to the fish tacos. And, yes, KB’s offers a taco Tuesday special, when you get three for the price of two.
KB’s most popular food is the Ketchum Burrito: It comes with your choice of meat and beans, cheese, guacamole, sour cream, rice, jalapeño and housemade salsa. “Our customers have told me before that the combination of ingredients feels like paradise in their mouths, ha-ha!” owner Rodolfo Serva explained in an email.
Two other KB’s burritos are named after Idaho cities. The Boise Burrito is stuffed with wild salmon, spinach, green chiles, potatoes, tomato and creamy chipotle. The Hailey Burrito is chicken, cheese, choice of beans, cabbage, roasted garlic, corn, cilantro and salsa.
Want a less typical ingredient? As in starchy tubers that aren’t Idaho taters? Chomp into Jordan’s Burrito: pork, cheese, choice of beans, guacamole, jalapeño, Cabo sauce and salsa. Oh, and grilled yams.
KB’s offers gluten-free and veggie options. Or build your own burrito.
