This new Eagle restaurant closed the day after it opened. It just started serving again.
When a new restaurant opens, eager customers often stampede the place.
The honeymoon got cut short at Coyne’s.
The restaurant and bar in Eagle opened March 16 — then closed the next day. Although Idaho’s stay-home order was not yet in effect, owner Kevin Settles shuttered Coyne’s as a coronavirus precaution. He did the same at Bardenay Restaurant & Distillery locations in Boise, Eagle and Couer d’Alene, which he also owns.
Coyne’s finally reopened its kitchen Wednesday. The restaurant at 676 E. Riverside Drive is serving lunch and dinner from noon to 8 p.m. daily — offering curbside takeout. Bardenay restaurants have been doing that for weeks.
Coyne’s customers can order food, pay online and choose a pickup time. “This way, we can ensure the safety of the customers and the staff with virtually contactless delivery to their car,” says Cindy Limber, spokesperson for Coyne’s and Bardenay.
Coyne’s current, limited menu includes a modest array of starters, entrees and sides.
The Smoked Brisket Sandwich ($18) features SRF American Kobe beef, bourbon barbecue sauce and Grandma Coyne’s slaw on a country white hoagie. Or get fancier with Butler’s Steak Risotto ($26), charbroiled SRF American Wagyu flat-iron, sliced over blue cheese risotto, lemon-garlic grilled asparagus and Tabasco gastrique.
“Similar to Bardenay’s prepared cocktail program,” Limber adds, “is the addition of Coynes’ Cocktail Kits for Two, which are signature drinks by our veteran barkeeps to mix at home and pair with our menu.”
Eagle residents soon will be able to experience Coyne’s covered patio, too. Dine-in restaurant service, which was put on hold by Idaho Gov. Brad Little’s stay-home order, is scheduled to reopen as soon as May 16.
