Recipe: COMFORT FOOD WEEK: POTATO SOUP

Few things taste better during a cold, dreary January than comfort food -- that butter-laden, stick-to-your-ribs stuff that mom used to make. This year, we'll share recipes for some comfort food favorites. This one comes from Country Living.

INGREDIENTS

6 slices bacon, cut into 1-inch pieces

3 lbs (about 5 large) russet potatoes

3 1/2 teaspoons salt

1 cup sour cream

1/4 lb (1 stick) butter

2 2/3 cups whole milk

1/2 teaspoon black pepper

4 scallions, thinly sliced

3/4 cups shredded sharp cheddar cheese
