Recipe: FISH WEEK: CREAMY FISH CHOWDER

We all know fish is good for us, but it's so delicate that it's sometimes difficult to prepare. This week, we'll offer several recipes that will help you incorporate fish into your diet without fish fear or intimidation. Today's recipe comes from Eating Well magazine.

INGREDIENTS

1 slice bacon, diced

1 small onion, chopped

1 stalk celery, chopped

1 clove garlic, minced

1 cup bottled clam juice, or reduced-sodium chicken broth

8 oz. tilapia or Pacific cod fillets, cut into 1-inch cubes

2 small russet potatoes, peeled and diced (about 2 cups)

1 teaspoon chopped fresh thyme, or 1/4 teaspoon dried

1 bay leaf

2/3 cup low-fat milk

1 tablespoon water

2 teaspoons cornstarch

1/8 teaspoon freshly ground pepper

2 teaspoons chopped fresh parsley, (optional)
