Recipe: ASIA WEEK: GRILLED CHICKEN WITH HOT AND SWEET DIPPING SAUCE

This week, we'll offer a few exotic and not-too-hard-to-prepare Asian recipes.

INGREDIENTS

Sauce:

1/2 cup rice or cider vinegar

1/2 cup sugar

2 cloves garlic

1/4 teaspoon salt

1 1/2 teaspoons crushed red pepper flakes

3 lbs. chicken breasts, thighs or legs

3 cloves garlic, halved

Kosher salt

Cracked pepper

3 tablespoons fish sauce

1 bunch cilantro, chopped (stems removed)

DIRECTIONS

To make sauce, place vinegar in small, nonreactive saucepan and heat to a boil. Add sugar, stirring until dissolved. Lower heat to medium-low and simmer for 5 minutes. Set aside.

Rub chicken with garlic cloves. Add salt and pepper. Marinate chicken in fish sauce and cilantro (large bags work well).

Grill chicken. Serve with sauce.
