Recipe: SLOW COOKER WEEK: LENTILS AND SAUSAGE

It's cold, dreary and everyone's starting to suffer from seasonal affective disorder. There's no better time to make your slow cooker do most of the dinner work for you. This week, we'll share a few slow cooker recipes. This one comes highly recommended and comes from allrecipes.com.

INGREDIENTS

1 (16 oz.) package dry lentils

1 (16 oz.) can diced tomatoes, drained

2 (14 oz.) cans beef broth

3 cups water

1 carrot, chopped

2 pounds kielbasa (Polish) sausage, cut into 1/2 inch pieces

1 stalk celery, chopped

DIRECTIONS

Rinse and drain lentils, but do not soak. In a slow cooker, stir together the lentils, tomatoes, broth, water, carrot, sausage, and celery.

Cover, and cook on High for 3 hours, or Low for 6 to 7 hours. Stir well before serving.

Good served over rice or topped with grated Parmesan and served with warm, crusty bread.
