Recipe: Sausage and Peppers

This Real Simple recipe is so simple, you won't even feel like you've cooked.

You'll have energy and time left over to make a batch of chocolate chip cookies to munch on while you watch your Friday night DVD.

Yield: 4 servings

3 tablespoons olive oil

4 Italian sausages

3 red bell peppers, thinly sliced

1 yellow onion, thinly sliced

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

4 hard rolls, halved and toasted

4 tablespoons Dijon mustard

Heat 1 tablespoon of the oil in a skillet over medium heat. Add the sausages and cook, turning, until browned on all sides and cooked through, about 15 minutes.

Heat the remaining oil in another skillet over medium heat. Add the peppers and onion. Cook until softened and golden, 10 to 12 minutes. Season with the salt and pepper.

Halve the sausages lengthwise and place 2 halves on the bottom of each roll. Top with some of the pepper-onion mixture and, if desired, the top of the roll.

Serve with the mustard on the side.
