Recipe: Grilled Ham and Cheese Sandwiches

I love the way this recipe from Real Simple magazine gives new life to your standard frozen waffle.

I'm always on the hunt for a good grilled cheese sandwich recipe. The simple dish has always been one of my favorite meals. I figure the more grilled sandwich recipes you have, the more often you can justify serving them for dinner.

Yield: 4 servings

8 frozen toaster waffles

1 tablespoon Dijon mustard

1/2 pound sliced deli ham

1/4 pound cheddar, thinly sliced

4 tablespoons butter

Place four of the waffles on a work surface. Spread one side of each with the mustard.

Top with the ham, cheese and remaining waffles. Spread the top of each sandwich with 1/2 tablespoon of the butter. Melt the remaining butter in a large nonstick skill over medium heat.

Place the sandwiches in the skillet, buttered-side up. Cook, pressing occasionally with the back of spatula, until the cheese melts and the waffles are golden, three to four minutes each side.
