Recipe: Beef Tenderloin with Fried Eggs

We've recommended before in this feature that you give breakfast for dinner a whirl. Let's face it. For most of us on most days, the fanciest breakfast might mean actually sitting at the table as we eat our peanut butter toast or pound down a bowl of Frosted Flakes.

That means many great breakfast foods get short shrift in our lives, and, being fans of breakfast, we find this really too bad.

That's why we're suggesting you bring out the fry pan tonight and feast on a little steak and eggs with this recipe from Serve them with a side of hashbrowns or even toast. If you're feeling really hungry -- and really ambitious -- cook up a batch of pancakes, too.

Yield: 4 serving

2 pounds beef tenderloin, cut in 4 pieces

8 eggs

6 tablespoons butter

Seasonings to taste

Season the tenderloin.

Cook in butter in frying pan on both sides for about 6 minutes.

Fry 2 eggs for each piece of tenderloin.

Before serving, place 2 fried eggs on top of each piece of tenderloin.
