Recipe: Hamburger Noodle Casserole

There are many, many versions of this classic comfort food. Here’s one that’s been lightened up a bit that you can try for dinner tonight.

2 tablespoons butter

1/2 pound ground beef

1/2 pound ground turkey

1 clove garlic, minced

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon sugar

2 8-ounce cans Italian-style tomato sauce

1 8-ounce package egg noodles

6 scallions, chopped

1 3-ounce package light cream cheese

1 cup light sour cream

1/2 cup shredded cheddar cheese

Combine butter through sugar in a pan and saute until meat is done.

Add tomato sauce and simmer 20 minutes. Meanwhile, cook noodles according to package directions.

Blend cream cheese and sour cream together; add scallions to cream cheese mixture.

In a slightly greased casserole, place 1/3 of the noodles, then 1/3 of scallion mixture, then 1/3 of the meat sauce; repeat twice.

Top casserole with the shredded cheese and bake at 350 degrees for 20 minutes or until thoroughly heated.
