Recipe: Pasta Carbonara

The reason we make recipes from "Real Simple" magazine at our house is because they're real simple. This pasta dish is a prime example. If you've got bacon in your larder and stuff for a salad, you won't even need to hit the grocery store.

Yield: 4 servings

1 pound linguine

6 strips of bacon, diced (use kitchen shears to make it easier)

4 egg yolks

1 cup grated parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup parsley, chopped

Cook pasta in boiling water according to package directions.

Fry bacon in a large skillet over medium heat. Transfer to a paper towel, reserving the drippings.

In a large bowl, whisk the egg yolks. Keep whisking while you add 2 tablespoons of the drippings. Quickly add the drained pasta (its heat helps cook the eggs) and cheese to the pasta and toss to combine.

Add the salt, pepper, parsley and bacon. Serve immediately with a green salad and breadsticks.
