New Chili’s to open, another remodeled, another leveled for Longhorn Steakhouse

If you’re a fan of Chili’s Grill & Bar near Boise Towne Square, you’re about to want your baby back, baby back, baby back.

The building will be bulldozed, according to applications filed with the city of Boise, and replaced by a LongHorn Steakhouse. A representative of the Longhorn Steakhouse chain declined to comment.

Still, things are heating up for Chili’s. Another Chili’s location in Boise is scheduled to get a makeover. And two new Treasure Valley Chili’s restaurants could open — one by the end of 2017.

The soon-to-be-razed Chili’s at 7997 W. Franklin Road is expected to close in mid- to late May, said John Little, vice president of Paradigm Restaurants.

Its demise was in the works before Meridian Restaurants, the Utah-based parent company of Paradigm, acquired it and 10 other Chili’s restaurants in Idaho, Washington and Montana last October.

“It wasn’t our choice on the Franklin restaurant at all,” Little said. The company would have preferred to remodel it and stay open, he said. “We ... love that site.”

Instead, the Chili’s at 916 S. Broadway Ave. near Albertsons Stadium is scheduled to be freshened up with a remodel in the next couple of months, he said.

And new Chili’s restaurants are on the way in the Valley. “One in the Boise area,” Little said, “and we’re looking at some options in Nampa, as well. The goal would be to have a new one in place by the end of the year.”
