It's State Fair season across the country, and this week, we'll share the recipes for some 2010 blue ribbon winners. This one earned 12-year-old kid chef Lyndsey Horne of Hutchinson, Kan., a blue ribbon in the Great American SPAM Championship at the 2010 Kansas State Fair.
15 jumbo pasta shells
3 ounces cream cheese, softened

1 (12 oz.) can SPAM, diced and browned
1/2 cup fresh parsley
1 egg, slightly beaten
1/4 cup Rotel
3 tablespoons parmesan Romano cheese, shredded
1 teaspoon dried basil leaves
1 jar Alfredo sauce
1/3 cup Monterey Jack cheese, shredded
Prepare pasta shells according to directions. In bowl, combine cream cheese, cottage cheese, SPAM, parsley, Rotel, egg and Romano Cheese and basil. Stuff mixture into pasta shells. Pour half of the jar of Alfredo into a shallow baking dish. Place SPAM shells in dish and cover with remaining Alfredo sauce. Top with Monterey Jack cheese and bake at 350 degrees for 25 to 30 minutes or until bubbly.
