Try this quick sandwich recipe for dinner tonight from Better Homes and Gardens.
Curried Tuna Sandwich
Yield: 4 servings
1-1/2 cups creamy deli coleslaw
1 small tomato, seeded and chopped
1 teaspoon curry powder
1 6-ounce can tuna, drained and flaked
1/4 cup chopped peanuts
4 ciabatta rolls, sliced horizontally
4 large butterhead (Bibb or Boston) lettuce leaves
Dairy sour cream dip with chives (optional)
In a small bowl, stir together coleslaw, tomato, and curry powder. Fold in tuna and chopped peanuts.
To serve, spoon the tuna mixture into sliced ciabatta rolls and top with lettuce leaves. If desired, top with dip. 4 servings.
