Got a Boboli or other ready-made pizza crust on hand?
Here's one healthy way to top it.
Yield: 4 servings
12-inch ready-made pizza base

13 ounce can tomatoes
1 onion, chopped
2 garlic cloves, chopped
1 teaspoon chopped oregano
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 carrot, grated
1 tablespoon olive oil
1 tablespoon balsamic vinegar
6 mushrooms, sliced
6 canned artichoke hearts
6 strips baked, smoked tofu (optional)
4 ounces cheddar cheese
Place the canned tomatoes in a food processor or blender and process until smooth. Transfer to a large saucepan, add the onion, garlic and oregano and simmer gently for 20 minutes.
Stir the remaining tomato topping ingredients into the pan then pour the mixture over the pizza base, spreading it right to the edges. Arrange the garnish ingredients and cheese on top.
Place the pizza on a baking try and cook in a preheated over at 400 degrees for 5 to 10 minutes, or until the cheese starts to bubble and turn brown.
