When Pho 779 owner Peter Bui decided to open his own place, he wanted it to be as authentic as possible, he says.
He started with his mother’s pho recipes for the main attraction. (Pho is a Vietnamese noodle soup.) Then he traveled to Vietnam to learn the secrets of making baguettes for his bahn mi, Vietnamese-style sandwiches.
Pho 779 is now open at 3327 N. Eagle Road, at the Kohl’s Shopping Center in Meridian. Bui makes his mother’s beef, chicken and vegan pho ($7.95-$9.50), and he’s working to develop a seafood pho.
Vietnamese pork chicken, beef and vegan banh mi run $3.95 to $4.50 ($7.95 for a combo with chips and a soft drink). He also serves Vietnamese egg rolls, fresh rolls, rice plates, yakisoba noodles bowls and other Asian items, plus smoothies (try the taro smoothie, Bui recommends) and traditional Vietnamese lattes flavored with caramel and vanilla.
Much of the Pho 779 menu is gluten-free, and there are many vegetarian and vegan options.
