FLATBREAD COMMUNITY OVEN
Flatbread Community Oven specializes in thin-crust Naples-style pies and rustic flatbreads baked in the blink of an eye in a 900-degree, wood-fired oven.
FCO is the only pizzeria in Idaho that makes pizzas that are certified by the Italian government. According to co-owner Lisa Lumsden, it took two years to gain that certification and all the ingredients for the certified pizzas are imported from Italy.
Lumsden says the success of the two-year-old pizzeria is due to an amazing staff.
"I get compliments on our service every single day," she said.
And Lumsden isn't afraid to pick favorites from her menu.
Her favorite pie is the maple-fennel sausage pizza with carmelized onions, but she has a real weakness for the macaroni and cheese, a secret concoction of five Italian cheeses.
"It is definitely not low cal," she said.
The most popular draw for FCO is that kids get to make their own pizzas, according to Lumsden.
"After they pick toppings, we bring the dough and toppings to the table. Once they've made the pizza, our chefs cook it right in front of them."
FCO also donates 25 cents of every flatbread to The Idaho Foodbank.
