TOFU WEEK: TOFU PEANUT BUTTER PIE

There's no need to be afraid of tofu, a versatile and healthy ingredient that also can taste great. This week, we'll share ideas for how to use it to its full potential. Today's comes from the cook book "The Compassionate Cook Cookbook."


INGREDIENTS:

16 oz. soft (silken) tofu
1 cup creamy peanut butter
3/4 cup sugar
2 tablespoons soy milk
2 teaspoon vanilla
1 pre-made pie crust
