The grocery store at 8th and Fort streets wants to give shoppers more reason to stop by the deli for a quick bite. It also plans to tackle the problem of cramped, dimly lit aisles. The Co-op already did an overhaul of its membership structure, giving members a greater financial stake in its business and more disclosures about its financial health.
Whats coming in the next year? Expect a bigger menu of pre-made foods more sandwiches and salads, a hot and cold self-service food bar and at least three soups a day. Plus a new self-serve antipasti bar with olives and vegetables, and a new cheese counter.
More seats, more light, less stuff. The store will add cafe-style seating. Brighter lighting is on the way, too. Less-popular products and superfluous shelves and fixtures will be jettisoned to make more room.
Pet owners, stay tuned. The Co-op is looking into shifting most of its pet food department to a storefront next to the Boise Co-op Wine Shop.
